I believe bread should be made the way our ancestors made it. With fresh milled ancient grains, hand mixed and made in small batches. I use organic flour and the freshest organic grains like spelt and einkorn. My sourdough starter is over a hundred years old and you can taste the difference! There is so much pride and passion in every loaf.

Why I use Ancient Grains

Nutritional Value: Ancient grains are higher in protein, fiber and essential vitamins and minerals. They also are beneficial for bone health, muscle repair and immune function.

Digestibility: Einkorn and Spelt (the two I use) have lower gluten levels, which can be easier to digest. The longer it ferments, the more the gluten breaks down.

Flavor and Texture: The ancient grains give the bread a heartier, less sour flavor. It also creates a denser bread which is more filling and nutrient dense. 
Sustainability: Choosing ancient grains supports sustainable farming practices and connects us to the way our food used to be made.

The difference between Einkorn and Spelt

Genetic Makeup: Spelt is a hybrid of emmer wheat and wild grass, while einkorn is a single-grained wheat (the mother wheat).

 
Nutritional Content: Spelt has a higher protein and fiber content than einkorn. Though both grains have higher protein and fiber than modern processed wheat.
 
Digestibility: Einkorn is easier to digest due to its lower gluten content and also has simpler genetic makeup. The body doesn't recognize it as processed wheat and does not attack it which is what causes the inflammatory/bloating response in those who are gluten sensitive and intolerant. 

Benefits of fresh milled grains

Freshly milled flour retains all essential nutrients which are lost in refined flour.

The natural flavors enhance the taste and texture of the bread.

This process supports better digestion and can help regulate blood sugar levels.

It's also eco-friendly as it reduces waste and packaging.

 

*Enriched wheat flour loses up to 80% of the nutrients found in the original wheat kernel during milling and refining. Enrichment aims to restore some of these nutrients, but it does not completely replace them.

Mystic Grains started as a vision to share a more nutrient dense sourdough. I wanted to stay true to the way it was made before enriched flours and commercial bread preservatives. Each loaf and pastry is hand crafted using high quality ingredients with nostalgic flavors.
